Ingredients

  • 2 pounds potatoes
  • 1 cup all-purpose flour
  • 1 egg

Instructions

  1. Peel and boil the potatoes until tender. Drain and let cool.
  2. Once cool, mash the potatoes until smooth.
  3. In a bowl, combine mashed potatoes, flour, egg, salt, and pepper to form a dough.
  4. Divide the dough into equal portions and shape them into balls.
  5. In a large pot, bring salted water to a boil.
  6. Add the dumplings and cook until they float to the surface, about 10-15 minutes.
  7. Remove the dumplings with a slotted spoon and let drain.
  8. Heat butter in a skillet and toss the dumplings with butter and parsley before serving.
