- 24 chocolate wafer cookies
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon peppermint extract
- 1/2 cup crushed peppermint candies
Instructions
- In a medium bowl, whip the heavy cream until soft peaks form.
- Add the powdered sugar and peppermint extract, then whip until stiff peaks form.
- On a serving platter, place one chocolate wafer down and top with a layer of the whipped cream.
- Repeat the layers, stacking the cookies as high as desired.
- Top with crushed peppermint candies.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a stronger peppermint flavor, increase the peppermint extract to 1 1/2 teaspoons.
- These can be made a day in advance for easier holiday entertaining.
