Delicious and rich molten pistachio lava cakes with a gooey center.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup semisweet chocolate chips
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup finely ground pistachios
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Grease ramekins with butter and dust with flour.
  3. Melt butter and chocolate in a double boiler.
  4. Whisk together eggs, yolks, and sugar until light in color.
  5. Add melted chocolate mixture, flour, salt, and ground pistachios, mix until combined.
  6. Pour batter into prepared ramekins.
  7. Bake for 12-14 minutes until the edges are firm and the center is soft.
  8. Let cool for 1 minute, then invert onto plates.
