Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup eggnog
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup eggnog (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together flour, sugars, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together buttermilk, oil, eggs, and vanilla.
  4. Combine the wet and dry ingredients and mix until just combined.
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cakes to cool in pans for 10 minutes before removing to a wire rack to cool completely.
  8. For the frosting, beat the softened butter until creamy, then gradually add powdered sugar and eggnog until you reach desired consistency.
  9. Once the cakes are completely cool, frost the top of one layer, place the second layer on top and frost the top and sides.
  10. Decorate as desired and serve.
