- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup eggnog
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup eggnog (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix together flour, sugars, baking powder, baking soda, spices, and salt.
- In another bowl, whisk together buttermilk, oil, eggs, and vanilla.
- Combine the wet and dry ingredients and mix until just combined.
- Pour the batter evenly into the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for 10 minutes before removing to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy, then gradually add powdered sugar and eggnog until you reach desired consistency.
- Once the cakes are completely cool, frost the top of one layer, place the second layer on top and frost the top and sides.
- Decorate as desired and serve.
Notes
- This cake can be made a day in advance, and the flavors will deepen overnight.
- Store any leftovers in an airtight container at room temperature for up to three days.
