Ingredients

  • 2 cups dried matemba (small dried fish)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups water
  • 1 cup maize meal (cornmeal)
  • 1/2 teaspoon honey
  • 1/4 teaspoon extra salt (for sadza)

Instructions

  1. Rinse the dried matemba thoroughly under cold running water to eliminate any residual salt and impurities, then drain and set aside.
  2. In a large frying pan, heat the olive oil over medium heat.
  3. Add the finely chopped onion and sauté until it becomes soft and translucent, about 5 minutes.
  4. Introduce the minced garlic, smoked paprika, sea salt, black pepper, and cayenne pepper (if desired) to the pan. Cook for an additional minute.
  5. Incorporate the rinsed matemba into the pan, cooking for approximately 10 minutes while stirring occasionally until warmed through and slightly crisp.
  6. Remove the pan from the heat and set it aside.
  7. In a separate saucepan, bring 4 cups of water to a rolling boil.
  8. Gradually whisk in the maize meal, stirring continuously to avoid lumps.
  9. Lower the heat and keep stirring until the mixture thickens, about 5-7 minutes.
  10. Add the honey and the additional 1/4 teaspoon of salt, mixing until well combined.
  11. Once the sadza has thickened and starts to pull away from the edges of the pot, take it off the heat and cover to let it rest for a few minutes.
  12. Plate the matemba alongside the creamy sadza and enjoy your meal!

Notes

  • Adjust the cayenne pepper according to your spice preference.
  • Ensure to stir the sadza continuously to achieve a smooth texture.
