Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg yolk
  • 2 tablespoons matcha green tea powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup raspberries
  • 2 tablespoons chia seeds
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, sugar, matcha powder, and salt.
  3. In another bowl, cream together the butter and egg yolk until smooth.
  4. Add the dry ingredients to the wet mixture and mix until just combined.
  5. Form the dough into 1-inch balls and place them on a baking sheet.
  6. Make an indent in the center of each ball.
  7. Bake for 10-12 minutes until lightly golden.
  8. In a small pot, cook raspberries, chia seeds, and honey over medium heat for about 5 minutes, stirring constantly.
  9. Let the mixture cool, then spoon into the cookie indents.
