- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup unsalted butter, softened
- 1 large egg yolk
- 2 tablespoons matcha green tea powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup raspberries
- 2 tablespoons chia seeds
- 2 tablespoons honey
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, sugar, matcha powder, and salt.
- In another bowl, cream together the butter and egg yolk until smooth.
- Add the dry ingredients to the wet mixture and mix until just combined.
- Form the dough into 1-inch balls and place them on a baking sheet.
- Make an indent in the center of each ball.
- Bake for 10-12 minutes until lightly golden.
- In a small pot, cook raspberries, chia seeds, and honey over medium heat for about 5 minutes, stirring constantly.
- Let the mixture cool, then spoon into the cookie indents.
