Delicious mango oatmeal crumble bars that are perfect for a sweet treat any time of day.

Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and diced
  • 1 tablespoon lemon juice
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a bowl, mix together oats, flour, brown sugar, softened butter, vanilla extract, baking soda, and salt until crumbly.
  3. Press half of the mixture into the bottom of the prepared dish.
  4. In another bowl, combine diced mango, lemon juice, and honey, then spread evenly over the crust.
  5. Sprinkle the remaining crumble mixture on top of the mango layer.
  6. Bake for 30-35 minutes or until golden brown.
  7. Let cool before slicing into bars.

Notes

  • For extra flavor, add a pinch of cinnamon to the crumble mixture.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
