- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 ripe mangoes, peeled and diced
- 1 tablespoon lemon juice
- 1/4 cup honey
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8-inch square baking dish.
- In a bowl, mix together oats, flour, brown sugar, softened butter, vanilla extract, baking soda, and salt until crumbly.
- Press half of the mixture into the bottom of the prepared dish.
- In another bowl, combine diced mango, lemon juice, and honey, then spread evenly over the crust.
- Sprinkle the remaining crumble mixture on top of the mango layer.
- Bake for 30-35 minutes or until golden brown.
- Let cool before slicing into bars.
Notes
- For extra flavor, add a pinch of cinnamon to the crumble mixture.
- Store leftovers in an airtight container at room temperature for up to 3 days.
