- 1 cup small tapioca pearls
- 1 ½ cups water
- 1 can (13.5 oz) coconut milk
- ½ cup sugar
- 1 ripe mango, diced
- ½ teaspoon vanilla extract
- Pinch of salt
- Fresh mint leaves for garnish (optional)
Instructions
- Rinse the tapioca pearls thoroughly under cold water until the water runs clear.
- In a medium-sized pot, bring the water to a rolling boil.
- Add the rinsed tapioca pearls to the boiling water, then reduce the heat to low and let them simmer for about 15-20 minutes, stirring occasionally until they turn translucent.
- After cooking, remove the pot from heat and let the pearls sit in the hot water for an additional 10 minutes.
- Drain the pearls and rinse them under cold water to stop the cooking process.
- In a separate saucepan, combine the coconut milk, sugar, vanilla extract, and a pinch of salt. Warm this mixture over medium heat, stirring until the sugar has dissolved, but do not bring it to a boil.
- Once the sugar is dissolved, add the drained tapioca pearls to the coconut milk mixture and stir until well combined.
- Allow the mixture to cool to room temperature.
- To assemble, layer the sago mixture with the diced mango in serving glasses, starting with a spoonful of sago, followed by a layer of mango, and repeat until the glasses are filled.
- Chill the assembled parfaits in the refrigerator for at least an hour before serving.
- If desired, top with fresh mint leaves before serving.
Notes
- Ensure the tapioca pearls are rinsed well to remove excess starch.
- Adjust the sweetness by adding more or less sugar according to taste.
- Chilling the dessert enhances the flavors and texture.
