Mango Coconut Sago Dessert is a tropical treat that combines the sweetness of mango with creamy coconut and chewy tapioca pearls.

Ingredients

  • 1 cup small tapioca pearls
  • 1 ½ cups water
  • 1 can (13.5 oz) coconut milk
  • ½ cup sugar
  • 1 ripe mango, diced
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Rinse the tapioca pearls thoroughly under cold water until the water runs clear.
  2. In a medium-sized pot, bring the water to a rolling boil.
  3. Add the rinsed tapioca pearls to the boiling water, then reduce the heat to low and let them simmer for about 15-20 minutes, stirring occasionally until they turn translucent.
  4. After cooking, remove the pot from heat and let the pearls sit in the hot water for an additional 10 minutes.
  5. Drain the pearls and rinse them under cold water to stop the cooking process.
  6. In a separate saucepan, combine the coconut milk, sugar, vanilla extract, and a pinch of salt. Warm this mixture over medium heat, stirring until the sugar has dissolved, but do not bring it to a boil.
  7. Once the sugar is dissolved, add the drained tapioca pearls to the coconut milk mixture and stir until well combined.
  8. Allow the mixture to cool to room temperature.
  9. To assemble, layer the sago mixture with the diced mango in serving glasses, starting with a spoonful of sago, followed by a layer of mango, and repeat until the glasses are filled.
  10. Chill the assembled parfaits in the refrigerator for at least an hour before serving.
  11. If desired, top with fresh mint leaves before serving.

Notes

  • Ensure the tapioca pearls are rinsed well to remove excess starch.
  • Adjust the sweetness by adding more or less sugar according to taste.
  • Chilling the dessert enhances the flavors and texture.
