Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix ricotta, sugar, eggs, vanilla extract, and lemon zest until well combined.
- Roll out the puff pastry and cut into circles.
- Place a tablespoon of the ricotta mixture in the center of each circle.
- Fold the pastry over and seal the edges.
- Place the pastries on a baking sheet and bake for 20-25 minutes or until golden brown.
- Dust with powdered sugar before serving.
