- 8 ounces mascarpone cheese
- 1 cup heavy cream
- 1 cup white chocolate, melted
- 1 cup fresh raspberries
- 1 cup ladyfinger cookies
- 1/2 cup brewed coffee, cooled
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
Instructions
- In a bowl, whip the heavy cream until soft peaks form.
- In another bowl, mix the mascarpone cheese, melted white chocolate, sugar, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- Dip ladyfingers in cooled coffee and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add half of the fresh raspberries on top.
- Repeat the layers with remaining ladyfingers, mascarpone mixture, and raspberries.
- Chill in the fridge for at least 4 hours before serving.
Notes
- For a richer flavor, you can use espresso instead of brewed coffee.
- Make sure the white chocolate is cooled before mixing with mascarpone.
