Ingredients

  • 1 pound beef liver
  • 2 quarts beef stock
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 bay leaves
  • 1 teaspoon black pepper
  • 2 cloves garlic, minced

Instructions

  1. Heat beef stock in a large pot over medium heat.
  2. Add onions, carrots, and celery; simmer for about 10 minutes.
  3. Add minced garlic, bay leaves, and black pepper to the pot.
  4. Stir in the beef liver and cook until it is just tender, around 5-7 minutes.
  5. Remove from heat, discard bay leaves, and serve hot.
