Ingredients

- 1 pound beef liver
- 4 tablespoons lard
- 1 cup diced onion
- 2 cups diced potatoes
- 4 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Heat lard in a large pot over medium heat.
- Add onions and sauté until translucent.
- Add potatoes and cook for 5 minutes.
- Pour in beef broth and bring to a boil.
- Lower heat and add liver, cooking until tender.
- Season with salt and pepper.
- Garnish with parsley before serving.
Notes
- This chowder is best served hot.
- Can substitute liver with other meats if preferred.
