Ingredients

  • 1 pound beef liver
  • 4 tablespoons lard
  • 1 cup diced onion
  • 2 cups diced potatoes
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat lard in a large pot over medium heat.
  2. Add onions and sauté until translucent.
  3. Add potatoes and cook for 5 minutes.
  4. Pour in beef broth and bring to a boil.
  5. Lower heat and add liver, cooking until tender.
  6. Season with salt and pepper.
  7. Garnish with parsley before serving.
