Delicate lemon lavender sandwich cookies filled with a creamy lemon buttercream frosting.

  • 1/4 cup culinary lavender
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, lavender, baking powder, and salt.
  3. In another bowl, cream together butter and granulated sugar until light and fluffy.
  4. Add the egg, lemon zest, and vanilla extract, and beat well.
  5. Gradually add the flour mixture to the butter mixture, mixing until combined.
  6. Roll dough into balls and place on baking sheets.
  7. Bake for 10-12 minutes until edges are golden.
  8. Let cool completely before frosting.
  9. For frosting, mix powdered sugar with lemon juice until smooth.
  10. Spread frosting on the bottom of one cookie and sandwich with another.
