Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 2 tablespoons cold water
  • 1 cup honey
  • 1 tablespoon dried lavender buds
  • 1/2 cup almond flour
  • 1 cup heavy cream
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, butter, and powdered sugar until crumbly. Add the egg yolk and cold water to form a dough.
  3. Roll out the dough and press it into a tart pan. Prick the bottom with a fork and bake for 15 minutes.
  4. In a saucepan, heat honey and lavender over low heat for 10 minutes. Strain to remove lavender.
  5. In another bowl, whisk together almond flour, heavy cream, eggs, vanilla, and salt. Add the honey mixture.
  6. Pour the filling into the tart shell and bake for another 25-30 minutes until set.
  7. Cool the tart before serving.
