- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1 egg yolk
- 2 tablespoons cold water
- 1 cup honey
- 1 tablespoon dried lavender buds
- 1/2 cup almond flour
- 1 cup heavy cream
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine flour, butter, and powdered sugar until crumbly. Add the egg yolk and cold water to form a dough.
- Roll out the dough and press it into a tart pan. Prick the bottom with a fork and bake for 15 minutes.
- In a saucepan, heat honey and lavender over low heat for 10 minutes. Strain to remove lavender.
- In another bowl, whisk together almond flour, heavy cream, eggs, vanilla, and salt. Add the honey mixture.
- Pour the filling into the tart shell and bake for another 25-30 minutes until set.
- Cool the tart before serving.
Notes
- Make sure to use culinary lavender for flavor.
- Serve chilled or at room temperature for best taste.
