Lavender Honey Scones with Cardamom Glaze are Irresistible!

  • Total Time: 40 minutes
  • Yield: 8 scones 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 tablespoon dried culinary lavender
  • 1/2 cup unsalted butter, chilled and diced
  • 1/2 cup heavy cream
  • 1/4 cup honey
  • 1 large egg
  • 1 cup powdered sugar (for the cardamom drizzle)
  • 1/2 teaspoon ground cardamom (for the cardamom drizzle)
  • 2-3 tablespoons milk (for the cardamom drizzle)

Instructions

  1. Preheat your oven to 400°F and prepare a baking sheet by lining it with parchment paper.
  2. In a spacious bowl, combine the flour, baking powder, salt, sugar, and dried lavender, mixing them thoroughly.
  3. Incorporate the cold, diced butter into the flour mixture, using a pastry cutter or your fingertips to blend until the texture resembles coarse crumbs.
  4. In another bowl, whisk together the heavy cream, honey, and egg until fully combined.
  5. Gently fold the wet mixture into the dry ingredients, stirring just until they come together—avoid overmixing to keep the scones tender.
  6. Transfer the dough onto a floured surface and lightly knead it a few times. Shape the dough into a circle about 1-inch thick.
  7. Cut the dough into triangles or use a round cutter to form individual scones, then arrange them on the prepared baking sheet.
  8. Bake for 15-20 minutes, or until the tops are a light golden brown. Once baked, remove them from the oven and let them cool for a few moments.
  9. While the scones are cooling, prepare the cardamom drizzle by whisking together the powdered sugar, ground cardamom, and enough milk to achieve your preferred consistency.
  10. Once the scones are slightly cooled, drizzle the cardamom glaze over them and allow it to set for a few minutes before enjoying.

Notes

  • Yields 8 scones.
  • For a bolder lavender flavor, consider increasing the dried lavender to 2 tablespoons.
  • Alternatively, swap the honey for maple syrup for a unique sweetness.
  • For a savory option, skip the glaze and serve the scones with clotted cream or butter.
