Instructions
- Preheat your oven to 400°F and prepare a baking sheet by lining it with parchment paper.
- In a spacious bowl, combine the flour, baking powder, salt, sugar, and dried lavender, mixing them thoroughly.
- Incorporate the cold, diced butter into the flour mixture, using a pastry cutter or your fingertips to blend until the texture resembles coarse crumbs.
- In another bowl, whisk together the heavy cream, honey, and egg until fully combined.
- Gently fold the wet mixture into the dry ingredients, stirring just until they come together—avoid overmixing to keep the scones tender.
- Transfer the dough onto a floured surface and lightly knead it a few times. Shape the dough into a circle about 1-inch thick.
- Cut the dough into triangles or use a round cutter to form individual scones, then arrange them on the prepared baking sheet.
