Ingredients

  • 1 cup bell pepper, sliced

  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the sweet potato glass noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat vegetable oil over medium heat.
  3. Add mushrooms, carrots, and bell pepper, and stir-fry for 5-7 minutes.
  4. Add minced garlic and cook for an additional minute.
  5. Add the cooked noodles, soy sauce, and sesame oil to the skillet. Toss to combine.
  6. Cook for another 2-3 minutes until heated through.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • For added spice, include some sliced jalapeños.
