Instructions
- Cook the sweet potato glass noodles according to package instructions, then drain and set aside.
- In a large skillet, heat vegetable oil over medium heat.
- Add mushrooms, carrots, and bell pepper, and stir-fry for 5-7 minutes.
- Add minced garlic and cook for an additional minute.
- Add the cooked noodles, soy sauce, and sesame oil to the skillet. Toss to combine.
- Cook for another 2-3 minutes until heated through.
- Garnish with green onions and sesame seeds before serving.
Notes
- For added spice, include some sliced jalapeños.
