A delicious tart featuring a creamy kiwi curd, topped with fluffy meringue.

Ingredients

  • 4 ripe kiwis
  • 1 cup sugar
  • 3 large eggs, separated
  • 1/4 cup unsalted butter
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 pre-baked tart shell
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar (for meringue)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, puree the kiwis until smooth.
  3. In a saucepan, combine the kiwi puree, sugar, egg yolks, butter, lemon juice, and salt. Cook over medium heat until thickened.
  4. Pour the kiwi curd into the pre-baked tart shell.
  5. In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar, beating until stiff peaks form.
  6. Spread the meringue over the kiwi curd, making sure it touches the edges.
  7. Bake for 10-12 minutes or until the meringue is golden brown.
  8. Allow to cool before serving.

Notes

  • Ensure the kiwis are ripe for the best flavor.
  • For a colorful presentation, add slices of kiwi on top of the meringue.
  • Store leftovers in the refrigerator.
