- 4 ripe kiwis
- 1 cup sugar
- 3 large eggs, separated
- 1/4 cup unsalted butter
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1 pre-baked tart shell
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar (for meringue)
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, puree the kiwis until smooth.
- In a saucepan, combine the kiwi puree, sugar, egg yolks, butter, lemon juice, and salt. Cook over medium heat until thickened.
- Pour the kiwi curd into the pre-baked tart shell.
- In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar, beating until stiff peaks form.
- Spread the meringue over the kiwi curd, making sure it touches the edges.
- Bake for 10-12 minutes or until the meringue is golden brown.
- Allow to cool before serving.
Notes
- Ensure the kiwis are ripe for the best flavor.
- For a colorful presentation, add slices of kiwi on top of the meringue.
- Store leftovers in the refrigerator.
