Instructions
- Heat oil in a skillet over medium heat.
- Beat the eggs in a bowl and season with salt.
- Add the chopped kimchi to the skillet and cook for 1-2 minutes.
- Pour the beaten eggs over the kimchi, stirring gently until they start to set.
- Sprinkle the cheddar cheese on top and let melt.
- Place the mixture on a tortilla and roll it up.
- Serve warm.
