- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 2 tablespoons chives, chopped
Instructions
- Hard boil the eggs, then peel and slice in half.
- Remove the yolks and place them in a bowl.
- Add the mayonnaise, mustard, salt, pepper, and paprika to the yolks and mix until smooth.
- Stir in the chopped chives.
- Fill the egg whites with the yolk mixture.
- Chill in the refrigerator before serving.
Notes
- Great as a snack or appetizer.
- Can be made ahead of time and stored in the fridge.
- For spicier flavor, add a dash of hot sauce to the filling.
