Delicious and soft peach-shaped cookies filled with a sweet peach jam.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 teaspoons baking powder
  • 5 cups all-purpose flour
  • 1 cup peach jam
  • 1/4 cup peach flavored liqueur (optional)
  • food coloring (yellow and red for coloring)
  • granulated sugar (for rolling)
  • powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract.
  4. Gradually add the baking powder and flour, mixing until combined.
  5. Form the dough into small balls and place them on baking sheets.
  6. Make an indentation in the center of each ball and fill with peach jam.
  7. Bake for 15-20 minutes until lightly golden.
  8. Let cool and then roll in granulated sugar and dust with powdered sugar if desired.

Notes

  • For a richer peach flavor, use peach flavored liqueur in the dough.
  • Store cookies in an airtight container for up to a week.
