Ingredients
Scale
- 2 pounds red potatoes
- 1/2 cup milk
- 4 tablespoons unsalted butter
- 2 cups chopped kale or cabbage
- 1 onion, finely chopped
- Salt to taste
- Pepper to taste
Instructions
- Peel and chop the red potatoes into chunks.
- Boil potatoes in salted water until tender, about 15 minutes.
- While potatoes are cooking, melt butter in a pan and sauté the chopped onion until translucent.
- Add the chopped kale or cabbage to the pan and cook until wilted.
- Drain the potatoes and return them to the pot.
- Add the milk, sautéed onions, and greens to the potatoes.
- Mash everything together until smooth and creamy.
- Season with salt and pepper to taste.
Notes
- Colcannon can also be served with a drizzle of melted butter on top.
- Feel free to add other ingredients like scallions or leeks.
