Irish Colcannon With Red Potatoes

A traditional Irish dish made with creamy mashed potatoes and cabbage, enriched with butter and milk.

Ingredients

Scale
  • 2 pounds red potatoes
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 2 cups chopped kale or cabbage
  • 1 onion, finely chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and chop the red potatoes into chunks.
  2. Boil potatoes in salted water until tender, about 15 minutes.
  3. While potatoes are cooking, melt butter in a pan and sauté the chopped onion until translucent.
  4. Add the chopped kale or cabbage to the pan and cook until wilted.
  5. Drain the potatoes and return them to the pot.
  6. Add the milk, sautéed onions, and greens to the potatoes.
  7. Mash everything together until smooth and creamy.
  8. Season with salt and pepper to taste.

Notes

  • Colcannon can also be served with a drizzle of melted butter on top.
  • Feel free to add other ingredients like scallions or leeks.
