- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup honey
- 1/4 cup vegetable oil
- 1 large egg
Instructions
- Preheat your oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, honey, vegetable oil, and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Let them cool slightly before serving.
Notes
- Try adding some blueberries or corn kernels for extra flavor!
- Store leftover muffins in an airtight container at room temperature.
