Deliciously sweet and moist cornbread muffins with a hint of honey, perfect for breakfast or a snack.

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup honey
  • 1/4 cup vegetable oil
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, honey, vegetable oil, and egg.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill the muffin cups about 2/3 full with the batter.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let them cool slightly before serving.

Notes

  • Try adding some blueberries or corn kernels for extra flavor!
