Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the softened butter and honey until smooth.
- Add the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped dried apricots.
- Pour the batter into a greased mini loaf pan.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool before removing from the pan.
