Instructions
- Preheat your oven to 350°F (175°C).
- Spread the pistachios on a baking sheet and roast for 8-10 minutes, until lightly golden.
- Allow the pistachios to cool slightly, then transfer them to a food processor.
- Blend the pistachios on high speed, scraping down the sides as necessary, until a creamy butter forms, usually about 5-10 minutes.
- If desired, add honey and coconut oil, and blend until fully incorporated.
- Store the pistachio butter in an airtight container in the refrigerator.
