Ingredients

- 2 pounds pork head
- 1 pound pork shoulder
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon black peppercorns
- 2 teaspoons salt
- 1 teaspoon thyme
- 1 tablespoon vinegar
- 1/2 cup chicken broth
Instructions
- Thoroughly clean the pork head and cut into pieces.
- In a large pot, combine the pork head, shoulder, onion, garlic, peppercorns, salt, thyme, vinegar, and chicken broth.
- Cover with water and bring to a boil. Reduce heat and simmer for 3 hours.
- Let cool and remove meat from bones, chopping finely.
- Pack meat into a terrine mold and refrigerate until set.
- Slice the terrine and sear in a hot pan until golden brown.

- For added flavor, consider using smoked meats.
- Serve with a tangy mustard for dipping.
