Ingredients

  • 2 pounds pork head
  • 1 pound pork shoulder
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 2 teaspoons salt
  • 1 teaspoon thyme
  • 1 tablespoon vinegar
  • 1/2 cup chicken broth

Instructions

  1. Thoroughly clean the pork head and cut into pieces.
  2. In a large pot, combine the pork head, shoulder, onion, garlic, peppercorns, salt, thyme, vinegar, and chicken broth.
  3. Cover with water and bring to a boil. Reduce heat and simmer for 3 hours.
  4. Let cool and remove meat from bones, chopping finely.
  5. Pack meat into a terrine mold and refrigerate until set.
  6. Slice the terrine and sear in a hot pan until golden brown.

Notes

  • For added flavor, consider using smoked meats.
