Ingredients

- 1 pound sweetbreads
- 4 tablespoons unsalted butter
- 1 lemon, juiced
- 1 tablespoon fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Soak the sweetbreads in cold water for several hours, changing the water occasionally.
- Remove the sweetbreads from the water, and gently peel away the outer membranes.
- Blanch the sweetbreads in boiling water for about 5 minutes, then drain and cool.
- Preheat the grill to medium-high heat.
- Season the sweetbreads with salt and pepper, then grill them for about 3-4 minutes on each side until golden brown.
- In a saucepan, melt the butter and add the lemon juice and chopped parsley. Stir to combine.
- Drizzle the lemon-butter sauce over the grilled sweetbreads before serving.
Notes
- Make sure to soak the sweetbreads well to remove any bitterness.
- You can substitute lemon with lime for a different flavor.
