Ingredients

  • 1 pound sweetbreads
  • 4 tablespoons unsalted butter
  • 1 lemon, juiced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Soak the sweetbreads in cold water for several hours, changing the water occasionally.
  2. Remove the sweetbreads from the water, and gently peel away the outer membranes.
  3. Blanch the sweetbreads in boiling water for about 5 minutes, then drain and cool.
  4. Preheat the grill to medium-high heat.
  5. Season the sweetbreads with salt and pepper, then grill them for about 3-4 minutes on each side until golden brown.
  6. In a saucepan, melt the butter and add the lemon juice and chopped parsley. Stir to combine.
  7. Drizzle the lemon-butter sauce over the grilled sweetbreads before serving.

Notes

  • Make sure to soak the sweetbreads well to remove any bitterness.
