Instructions
- Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a mixing bowl, combine rolled oats, almond flour, coconut sugar, and salt.
- In another bowl, mix together melted coconut oil, maple syrup, grated ginger, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir until well combined.
- Spread the mixture evenly in the prepared baking tray.
- Bake for 15-20 minutes or until golden and crunchy.
- Let cool, then cut into squares or break into pieces.
