Ingredients

  • 1/2 cup almond flour
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 tablespoons grated fresh ginger
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine rolled oats, almond flour, coconut sugar, and salt.
  3. In another bowl, mix together melted coconut oil, maple syrup, grated ginger, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir until well combined.
  5. Spread the mixture evenly in the prepared baking tray.
  6. Bake for 15-20 minutes or until golden and crunchy.
  7. Let cool, then cut into squares or break into pieces.
