Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the flour, powdered sugar, salt, ground ginger, and ground turmeric. Mix well.
  3. Add the softened butter to the dry ingredients and blend until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
  4. Bake the crust in the preheated oven for 15 minutes or until lightly golden.
  5. While the crust is baking, prepare the filling. In a separate bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  6. Once the crust is done, remove it from the oven and pour the lemon filling over the hot crust. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly golden.
  7. Allow the bars to cool completely in the baking dish on a wire rack. Once cooled, refrigerate for at least 1 hour before cutting into squares.
  8. Serve chilled or at room temperature. Dust with additional powdered sugar before serving, if desired.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the filling.
  • You can also substitute lime juice for lemon juice for a different flavor profile.
