Ingredients

  • 1 ½ cups ginger snaps, crushed
  • ½ cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • 1 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix crushed ginger snaps and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth.
  4. Add sugar, eggs, vanilla, ground ginger, and ground cinnamon, mixing until combined.
  5. Fold in sour cream until smooth.
  6. Pour cream cheese mixture over the crust in the pan.
  7. Bake for 55-60 minutes, until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a spicier kick, add more ground ginger to taste.
  • Serve with a dollop of whipped cream for extra flavor.
