- 1 ½ cups ginger snaps, crushed
- ½ cup unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon ground ginger
- ½ teaspoon ground cinnamon
- 1 cup sour cream
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix crushed ginger snaps and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese until smooth.
- Add sugar, eggs, vanilla, ground ginger, and ground cinnamon, mixing until combined.
- Fold in sour cream until smooth.
- Pour cream cheese mixture over the crust in the pan.
- Bake for 55-60 minutes, until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- For a spicier kick, add more ground ginger to taste.
- Serve with a dollop of whipped cream for extra flavor.
