- 2 cups rice
- 2 cups black beans
- 1 large onion, chopped
- 2 tomatoes, diced
- 4 cups vegetable broth
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
Instructions
- Rinse the rice and beans under cold water.
- In a pot, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced tomatoes and cook until soft.
- Add the rinsed rice and beans to the pot and stir well.
- Pour in the vegetable broth, salt, black pepper, cayenne pepper, and thyme.
- Bring to a boil, then reduce heat and cover.
- Cook for about 20-25 minutes until the rice and beans are tender.
- Fluff with a fork and serve hot.

- For a vegetarian version, ensure the vegetable broth is plant-based.
- Adjust the spices to taste for preferred heat level.
