Ingredients

  • 2 cups black beans
  • 1 large onion, chopped
  • 2 tomatoes, diced
  • 4 cups vegetable broth
  • 2 tablespoons vegetable oil

  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme

Instructions

  1. Rinse the rice and beans under cold water.
  2. In a pot, heat the vegetable oil over medium heat.
  3. Add the chopped onion and sauté until translucent.
  4. Add the diced tomatoes and cook until soft.
  5. Add the rinsed rice and beans to the pot and stir well.
  6. Pour in the vegetable broth, salt, black pepper, cayenne pepper, and thyme.
  7. Bring to a boil, then reduce heat and cover.
  8. Cook for about 20-25 minutes until the rice and beans are tender.
  9. Fluff with a fork and serve hot.
