- 8 ounces elbow macaroni

- 1 cup shredded mozzarella cheese

- 1 cup crumbled blue cheese
- 1/2 teaspoon salt

- 1/4 teaspoon nutmeg
- 1/2 cup breadcrumbs
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the macaroni according to package instructions; drain.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
- Slowly whisk in the milk, cooking until the sauce thickens.
- Remove from heat and stir in the mozzarella, cheddar, Parmesan, and blue cheese until melted.
- Add the cooked macaroni into the cheese sauce, mixing well.
- Season with salt, pepper, and nutmeg.
- Transfer to a baking dish and sprinkle with breadcrumbs.
- Bake in the preheated oven for 25-30 minutes until golden and bubbly.

- For a spicier version, add red pepper flakes to the cheese sauce.
