Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon matcha powder
  • 1/2 cup mashed ripe banana
  • 1/2 cup coconut milk
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, coconut sugar, baking powder, baking soda, salt, and matcha powder.
  3. In another bowl, mix the mashed banana, coconut milk, melted coconut oil, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients and stir until just combined. Fold in the shredded coconut.
  5. Scoop the batter into the muffin tin and fill each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before serving.

Notes

  • For a sweeter muffin, add chocolate chips.
  • Store in an airtight container for up to 3 days.
