A traditional Finnish salmon soup that is creamy, hearty, and incredibly delicious.

Ingredients

  • 1 pound fresh salmon fillet
  • 4 cups fish stock or water
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 1 leek, sliced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, and leek; sauté until softened.
  2. Add the diced potatoes and fish stock to the pot. Bring to a boil and then let simmer until the potatoes are tender.
  3. Cut the salmon into bite-sized pieces and gently add to the pot. Simmer until the salmon is cooked through.
  4. Stir in the heavy cream and season with salt. Heat through without boiling.
  5. Serve hot, garnished with fresh dill.

Notes

  • This soup can be made with both fresh or frozen salmon.
  • For a more robust flavor, consider adding a splash of white wine.
