- 1 pound fresh salmon fillet
- 4 cups fish stock or water
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 2 carrots, sliced
- 1 leek, sliced
- 1 cup heavy cream
- 2 tablespoons butter
- Salt to taste
- Fresh dill for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, carrots, and leek; sauté until softened.
- Add the diced potatoes and fish stock to the pot. Bring to a boil and then let simmer until the potatoes are tender.
- Cut the salmon into bite-sized pieces and gently add to the pot. Simmer until the salmon is cooked through.
- Stir in the heavy cream and season with salt. Heat through without boiling.
- Serve hot, garnished with fresh dill.
Notes
- This soup can be made with both fresh or frozen salmon.
- For a more robust flavor, consider adding a splash of white wine.
- Serve with crusty bread for a complete meal.
