  • 1 cup breadcrumbs
  • 1 cup prepared stuffing mix

  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1/4 cup chicken broth (adjust as necessary)
  • 1 tablespoon olive oil (for drizzling)

Instructions

  1. Preheat your oven to 375°F and prepare a baking sheet with parchment paper.
  2. In a large bowl, mix together the shredded turkey, breadcrumbs, stuffing mix, chopped cranberries, diced celery, diced onion, parsley, garlic powder, thyme, salt, and black pepper until well blended.
  3. Incorporate the beaten egg and chicken broth, mixing until the ingredients are cohesive; add more chicken broth if the mixture is too crumbly.
  4. Shape the mixture into small balls, roughly 1 to 1.5 inches in diameter, and arrange them on the lined baking sheet.
  5. Lightly drizzle olive oil over the tops of the turkey bites.
  6. Bake for 20-25 minutes, or until they turn a lovely golden brown and are thoroughly heated.
  7. Allow to cool slightly before serving.

Notes

  • For an extra kick, consider adding 1/4 teaspoon of red pepper flakes to the mixture.
