- 1 cup raw cashews
- 1/2 cup coconut cream
- 1/4 cup maple syrup
- 1/2 cup brewed coffee, cooled
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder
- 1 package vegan ladyfingers
Instructions
- Soak the cashews in water for at least 4 hours, then drain.
- In a blender, combine the soaked cashews, coconut cream, maple syrup, coffee, and vanilla extract. Blend until smooth.
- In a shallow dish, pour some brewed coffee and dip each ladyfinger briefly.
- Layer the dipped ladyfingers in a dish, followed by the cashew mixture.
- Repeat the layers until all ingredients are used, finishing with the cashew layer on top.
- Chill in the fridge for at least 4 hours.
- Before serving, dust with cocoa powder.
Notes
- For a richer flavor, you can add a dash of rum or coffee liqueur.
- Make sure to soak the cashews properly for a creamy texture.
