- 1 pound ground beef
- 1 cup breadcrumbs
- 1 egg
- 2 teaspoons Italian seasoning
- 4 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups egg noodles
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a bowl, mix ground beef, breadcrumbs, egg, Italian seasoning, salt, and pepper. Form into small meatballs.
- In a large pot, heat broth and add diced tomatoes, carrots, celery, onion, and garlic.
- Bring the mixture to a boil and then add meatballs. Reduce heat to a simmer.
- Cook for about 20 minutes or until meatballs are cooked through.
- Add egg noodles and cook until tender, about 5-7 minutes.
- Adjust seasoning as needed and serve hot.
Notes
- For added flavor, sauté the vegetables in a little olive oil before adding the broth.
- This soup can be made ahead of time and freezes well.
