Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 2 teaspoons Italian seasoning
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups egg noodles
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, egg, Italian seasoning, salt, and pepper. Form into small meatballs.
  2. In a large pot, heat broth and add diced tomatoes, carrots, celery, onion, and garlic.
  3. Bring the mixture to a boil and then add meatballs. Reduce heat to a simmer.
  4. Cook for about 20 minutes or until meatballs are cooked through.
  5. Add egg noodles and cook until tender, about 5-7 minutes.
  6. Adjust seasoning as needed and serve hot.

Notes

  • For added flavor, sauté the vegetables in a little olive oil before adding the broth.
  • This soup can be made ahead of time and freezes well.
