Ingredients

  • 3/4 cup granulated sugar

Instructions

  1. In a heatproof bowl, whisk together mango puree, sugar, lime juice, eggs, and salt until smooth.
  2. Place the bowl over a pot of simmering water (double boiler) and cook, stirring constantly, until the mixture thickens (about 10-15 minutes).
  3. Remove from heat and stir in the cubed butter until fully melted and combined.
  4. Let the mango curd cool before transferring it to a jar. Store in the refrigerator.
