- 2 cups ripe mango puree
- 3/4 cup granulated sugar
- 1/4 cup fresh lime juice
- 1/2 cup unsalted butter, cubed
- 4 large eggs
- 1/4 teaspoon salt
Instructions
- In a heatproof bowl, whisk together mango puree, sugar, lime juice, eggs, and salt until smooth.
- Place the bowl over a pot of simmering water (double boiler) and cook, stirring constantly, until the mixture thickens (about 10-15 minutes).
- Remove from heat and stir in the cubed butter until fully melted and combined.
- Let the mango curd cool before transferring it to a jar. Store in the refrigerator.
Notes
- The curd will thicken more as it cools.
- This can be stored in the refrigerator for up to 2 weeks.
- Use fresh, ripe mangoes for the best flavor.
