Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup butter, melted
  • 1/4 cup erythritol or another keto sweetener
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup blackberries
  • 1/2 cup pistachios, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, and salt.
  3. Add melted butter and vanilla extract; mix until a dough forms.
  4. Press the dough evenly into the bottom of the prepared baking dish.
  5. Bake for 15-20 minutes or until golden brown.
  6. Remove from oven and let cool slightly.
  7. Top the crust with blackberries and chopped pistachios.
  8. Bake for another 15 minutes.
  9. Allow to cool completely before cutting into bars.
