- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup butter, melted
- 1/4 cup erythritol or another keto sweetener
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup blackberries
- 1/2 cup pistachios, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, erythritol, and salt.
- Add melted butter and vanilla extract; mix until a dough forms.
- Press the dough evenly into the bottom of the prepared baking dish.
- Bake for 15-20 minutes or until golden brown.
- Remove from oven and let cool slightly.
- Top the crust with blackberries and chopped pistachios.
- Bake for another 15 minutes.
- Allow to cool completely before cutting into bars.
Notes
- For a sweeter dessert, adjust the amount of erythritol to taste.
- Store any leftover bars in an airtight container in the refrigerator for up to a week.
