Ingredients

- 1 cup fresh blueberries
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup lemon juice
- 1/4 cup unsalted butter
Instructions
- In a saucepan, combine blueberries and sugar. Cook over medium heat until blueberries burst and mixture is bubbly.
- In a separate bowl, whisk together eggs and lemon juice.
- Slowly drizzle the egg mixture into the blueberry mixture, stirring constantly.
- Cook until thickened, then remove from heat and stir in butter until melted.
- Strain through a fine sieve to remove skins and seeds.
- Let cool before using or storing.

- This curd can be stored in the refrigerator for up to two weeks.
- Use fresh blueberries for the best flavor and color.
