Delicious and fluffy bakery-style pistachio muffins, perfect for breakfast or a snack.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup ground pistachios
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup chopped pistachios for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, ground pistachios, sugar, baking powder, and salt.
  3. In another bowl, mix together milk, oil, egg, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until combined.
  5. Divide batter evenly among muffin cups and top with chopped pistachios.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra flavor, consider adding a pinch of ground cardamom.
