- 1 cup all-purpose flour
- 1/2 cup ground pistachios
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup chopped pistachios for topping
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, ground pistachios, sugar, baking powder, and salt.
- In another bowl, mix together milk, oil, egg, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until combined.
- Divide batter evenly among muffin cups and top with chopped pistachios.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, consider adding a pinch of ground cardamom.
- Store muffins in an airtight container for up to 3 days.
