Ingredients

  • 1 ½ cups digestive biscuits, crushed
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 1 tablespoon Earl Grey tea leaves
  • 1 tablespoon vanilla extract
  • 3 large eggs
  • 2 teaspoons lemon juice
  • ½ cup fresh berries for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the crushed digestive biscuits with melted butter and press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth.
  4. Add the heavy cream, vanilla, and Earl Grey tea, mixing well.
  5. Add the eggs one at a time, then mix in the lemon juice.
  6. Pour the cheesecake mixture over the crust and bake for 50-60 minutes until set.
  7. Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
  8. Top with fresh berries before serving.
