- 1 ½ cups digestive biscuits, crushed
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup heavy cream
- ½ cup granulated sugar
- 1 tablespoon Earl Grey tea leaves
- 1 tablespoon vanilla extract
- 3 large eggs
- 2 teaspoons lemon juice
- ½ cup fresh berries for garnish
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix the crushed digestive biscuits with melted butter and press into the bottom of a springform pan.
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add the heavy cream, vanilla, and Earl Grey tea, mixing well.
- Add the eggs one at a time, then mix in the lemon juice.
- Pour the cheesecake mixture over the crust and bake for 50-60 minutes until set.
- Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
- Top with fresh berries before serving.
Notes
- For a stronger flavor, steep the tea leaves in the cream for 30 minutes before mixing.
- Make sure all ingredients are at room temperature for a smooth batter.
- Cheesecake can be made a day in advance for better flavor development.
