- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 pound duck giblets
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, garlic, carrot, and celery; sauté until soft.
- Add duck giblets and cook until browned.
- Pour in chicken broth, thyme, bay leaves, soy sauce, and rice vinegar.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper to taste.
- Serve hot with crusty bread.

- Can be made in advance and reheated.
- Feel free to add other vegetables like potatoes or mushrooms.
