Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 pound duck giblets
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, carrot, and celery; sauté until soft.
  3. Add duck giblets and cook until browned.
  4. Pour in chicken broth, thyme, bay leaves, soy sauce, and rice vinegar.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread.
