Instructions
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs with melted butter and press into a springform pan.
- In a bowl, beat cream cheese and sugar until smooth.
- Add dragon fruit puree, vanilla extract, and mix well.
- Add eggs one at a time, mixing after each addition.
- Stir in cornstarch and heavy cream.
- Pour the mixture over the crust and smooth the top.
- Bake for 45 minutes or until set.
- Cool, then refrigerate for at least 4 hours before serving.
