- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 1 cup fresh raspberries
- 1 cup raspberry preserves
- 4 large egg whites
- 1/2 teaspoon cream of tartar
- 3/4 cup granulated sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a mixing bowl, combine flour and powdered sugar. Cut in butter until the mixture resembles coarse crumbs.
- Press the mixture firmly into the bottom of the prepared baking dish.
- Bake for 15 minutes or until lightly browned.
- Spread the raspberry preserves evenly over the baked crust.
- In a separate bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add granulated sugar, beating until stiff peaks form.
- Spread the meringue over the raspberry layer, making sure to seal the edges.
- Bake for an additional 15-20 minutes or until meringue is golden brown.
- Allow to cool completely before slicing into bars.
Notes
- For a stronger raspberry flavor, consider adding more raspberry preserves.
- Store bars in an airtight container at room temperature for up to three days.
