  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 cup fresh raspberries
  • 1 cup raspberry preserves
  • 4 large egg whites
  • 1/2 teaspoon cream of tartar
  • 3/4 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a mixing bowl, combine flour and powdered sugar. Cut in butter until the mixture resembles coarse crumbs.
  3. Press the mixture firmly into the bottom of the prepared baking dish.
  4. Bake for 15 minutes or until lightly browned.
  5. Spread the raspberry preserves evenly over the baked crust.
  6. In a separate bowl, beat the egg whites and cream of tartar until soft peaks form.
  7. Gradually add granulated sugar, beating until stiff peaks form.
  8. Spread the meringue over the raspberry layer, making sure to seal the edges.
  9. Bake for an additional 15-20 minutes or until meringue is golden brown.
  10. Allow to cool completely before slicing into bars.
