- 4 green plantains
- 1/2 cup pork cracklings (chicharrón)
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Peel the plantains and cut them into chunks.
- Place the plantains in a pot with water and salt. Bring to a boil and cook until they are tender, about 20 minutes.
- In a separate pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
- Drain the plantains and mash them in a large bowl.
- Add the pork cracklings, garlic oil, black pepper, and mix well until combined.
- Serve warm as a side dish.
Notes
- For a creamier texture, you can add a splash of milk while mashing the plantains.
- Chicharrón can be adjusted according to taste; feel free to use more or less.
