Ingredients

  • 4 green plantains
  • 1/2 cup pork cracklings (chicharrón)
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Peel the plantains and cut them into chunks.
  2. Place the plantains in a pot with water and salt. Bring to a boil and cook until they are tender, about 20 minutes.
  3. In a separate pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
  4. Drain the plantains and mash them in a large bowl.
  5. Add the pork cracklings, garlic oil, black pepper, and mix well until combined.
  6. Serve warm as a side dish.

Notes

  • For a creamier texture, you can add a splash of milk while mashing the plantains.
  • Chicharrón can be adjusted according to taste; feel free to use more or less.
