  • 1 egg, beaten

  • 1 tablespoon dried rosemary
  • 8 ounces mozzarella cheese, cubed

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture, then knead until smooth.
  3. Cover and let the dough rise for 1 hour.
  4. Preheat the oven to 450°F (232°C).
  5. Divide the dough into 12 pieces, flatten each, and add mozzarella cubes in the center. Seal the dough around the cheese.
  6. In a separate bowl, mix baking soda with 4 cups of water. Dip each pretzel dough ball into the soda solution.
  7. Place on a baking sheet, brush with beaten egg, and sprinkle with coarse salt and rosemary.
  8. Bake for about 12-15 minutes until golden brown.
  9. Let cool slightly before serving.
