- 2 cups warm water
- 1 packet active dry yeast
- 1/4 cup granulated sugar
- 5 cups all-purpose flour
- 1 tablespoon salt
- 1/4 cup baking soda
- 1 egg, beaten
- 1 tablespoon coarse sea salt
- 1 tablespoon dried rosemary
- 8 ounces mozzarella cheese, cubed
Instructions
- In a large bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until frothy.
- Add flour and salt to the yeast mixture, then knead until smooth.
- Cover and let the dough rise for 1 hour.
- Preheat the oven to 450°F (232°C).
- Divide the dough into 12 pieces, flatten each, and add mozzarella cubes in the center. Seal the dough around the cheese.
- In a separate bowl, mix baking soda with 4 cups of water. Dip each pretzel dough ball into the soda solution.
- Place on a baking sheet, brush with beaten egg, and sprinkle with coarse salt and rosemary.
- Bake for about 12-15 minutes until golden brown.
- Let cool slightly before serving.
