Ingredients

  • 1 pound chicken gizzards
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • Vegetable oil for frying

Instructions

  1. Soak chicken gizzards in buttermilk for at least 2 hours or overnight.
  2. In a large bowl, combine flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.
  3. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  4. Remove gizzards from buttermilk and dredge in flour mixture until well coated.
  5. Fry gizzards in batches for about 5-7 minutes, or until golden brown and crispy.
  6. Remove from oil and place on paper towels to drain excess oil.
  7. Serve hot with your favorite dipping sauce.
