Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the Dijon mustard, heavy cream, olive oil, garlic powder, salt, and black pepper.
- Add the baby potatoes to the bowl and toss until they are well coated.
- Spread the coated potatoes on a baking sheet in a single layer.
- Roast in the preheated oven for 25–30 minutes or until golden brown and tender.
- Remove from the oven and sprinkle with fresh parsley before serving.
