- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 16 ounces mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 15 ounces ricotta cheese
- 2 cups spinach, chopped
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cups marinara sauce
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add mushrooms, thyme, salt, and pepper; cook until mushrooms are tender.
- In a bowl, combine ricotta cheese, spinach, and half of the mozzarella.
- Spread a layer of marinara sauce in a baking dish, place three noodles on top.
- Add half of the ricotta mixture, half of the mushroom mixture, and a sprinkle of Parmesan.
- Repeat layers, finishing with noodles, marinara sauce, and remaining mozzarella and Parmesan on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes until cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- For added flavor, you can include herbs like basil or oregano.
- Make sure to allow the lasagna to rest before slicing for cleaner pieces.
