This creamy mushroom lasagna is a meatless delight, packed with rich flavors and a perfect comfort food for any dinner.

Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 16 ounces mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 15 ounces ricotta cheese
  • 2 cups spinach, chopped
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  4. Add mushrooms, thyme, salt, and pepper; cook until mushrooms are tender.
  5. In a bowl, combine ricotta cheese, spinach, and half of the mozzarella.
  6. Spread a layer of marinara sauce in a baking dish, place three noodles on top.
  7. Add half of the ricotta mixture, half of the mushroom mixture, and a sprinkle of Parmesan.
  8. Repeat layers, finishing with noodles, marinara sauce, and remaining mozzarella and Parmesan on top.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes until cheese is bubbly.
  10. Let it cool for a few minutes before serving.

Notes

  • For added flavor, you can include herbs like basil or oregano.
  • Make sure to allow the lasagna to rest before slicing for cleaner pieces.
