- 8 ounces penne pasta
- 1 pound chicken breast, diced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup bell peppers, sliced
- 1 cup onion, sliced
- 2 cloves garlic, minced
- 1 cup parmesan cheese, grated
- Salt to taste
- Black pepper to taste
Instructions
- Cook the penne pasta according to package instructions and drain.
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and Cajun seasoning, cooking until chicken is browned and cooked through.
- Remove chicken and set aside. In the same skillet, add garlic, bell peppers, and onion, sautéing until tender.
- Pour in chicken broth and heavy cream, bringing to a simmer.
- Stir in parmesan cheese until melted.
- Add the cooked pasta and chicken back into the skillet, mixing well.
- Season with salt and black pepper as desired.
- Serve hot.
Notes
- For a spicier version, add more Cajun seasoning or a dash of hot sauce.
- This dish can be made with shrimp instead of chicken for a seafood twist.
