  • 1 pound chicken breast, diced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1 cup onion, sliced
  • 2 cloves garlic, minced
  • 1 cup parmesan cheese, grated
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions and drain.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced chicken and Cajun seasoning, cooking until chicken is browned and cooked through.
  4. Remove chicken and set aside. In the same skillet, add garlic, bell peppers, and onion, sautéing until tender.
  5. Pour in chicken broth and heavy cream, bringing to a simmer.
  6. Stir in parmesan cheese until melted.
  7. Add the cooked pasta and chicken back into the skillet, mixing well.
  8. Season with salt and black pepper as desired.
  9. Serve hot.

Notes

  • For a spicier version, add more Cajun seasoning or a dash of hot sauce.
